Ingredients:
1 Zucchini grated (press out any excess moisture)
Twice the amount of grated Zucchinis Monterrey Jack cheese
2 jalapenos finely chopped
1 tsp Italian seasoning
1 tsp dried oregano
1 tsp dried basil
Directions:
- Mix all the ingredients in a bowl.
- Place about a spoonful of this mix on a baking sheet covered with parchment paper (not aluminum foil) or a silpat mat. If necessary, gently flatten with your finger or the back of a spoon and scoot in any loose pieces.
- Bake Zucchini Cheese Chips in a 375 degree F oven for about 15 minutes. The chips should be sizzling when you take them out and the edges should be starting to brown. Allow the crisps to settle on the baking sheet for about 5 minutes and then transfer them to a serving plate. If you think these are a bit soft and need more crunchy/crispy texture allow for another 5-8 minutes and take them off. Once ready let them cool down and the crisps will continue to firm up.
