I am a software professional and live currently in New Jersey. I was born and raised in India and have been living in the United States since June 1999. During my free time I focus on living healthy and have been trying to reverse my epidemic disease – type 2 diabetes. I have explored a lot on how to live healthy through clean eating, mean training, going green etc. I am blessed with an awesome family and great friends. I love music but totally am tone deaf when it comes to singing, can listen to any kind of music – starting from spiritual to hip-hop, don’t believe in eliminating any genre. Love reading and enjoy nature when the weather is awesome…!

I started my WOL/WOE(Way of Living/ Way of Eating) w/ Keto; the low carb, high fat/protein diet (on 9/28 and within 3 months of diet, have reversed my diabetes). It has changed my life completely, I reversed my diabetes and gained a healthier and a lean body.

It was tough to get on board with the consideration of 75% of fat intake, 15% of protein and only 5% of carbs. Having said that it was a bit difficult to get this incorporated into my lifestyle – but wasn’t impossible.

Main intake of fat food items were olives, avocados, coconut(shreds, milk, sliced), HWC(Heavy whipping cream), cheese, olive/avocado/coconut oils, MCT(Medium chain triglyceride oil).

Protein was from tofu(organic & non-gmo), tofu noodles, seeds(flax, chia, pumpkin and sunflower), nuts (almonds, pistachios, brazil, walnuts, macademias and very minimal cashews), fresh green leafy veggies, other low GI veggies and protein powders.

For carbs, I tend to go overboard, but the fiber in the veggies saves me. Also i use low carb flours like almond, coconut, oat fiber, flaxmeal, chiameal and physillium husk to make wraps and rotis with veggies as the main dishes.

Being a vegetarian(no eggs, no meat or seafood) it was a bit difficult finding foods with high fat/protein content but over the time I have experimented and worked out a few recipes which I would like to share with all of you out there looking for veg keto recipes.
