Keto Fenugreek Wraps – Methi Paranthe are a tasty replacement for the wheat paranthas we Indians love to eat with a healthy twist.

Fenugreek are uber healthy and a rich source of steroidal saponins that prevent the absorption of cholesterol and triglycerides. It contains high amount of potassium that counters the action of sodium to help control heart rate and blood pressure. It also contains amino acid responsible for inducing the production of insulin. As fenugreek is rich in fibre and antioxidants, it helps in flushing out harmful toxins from the body and thus, aids digestion. Include fenugreek in your weight loss diet by chewing soaked methi seeds in the morning on an empty stomach. The natural soluble fibre in the fenugreek can swell and fill the stomach thereby suppressing your appetite and aiding your weight loss goals.
Ingredients:

4 tbs coconut flour
2 tbs almond flour
1/4 cup psyllium husk
1/4 cup flaxmeal
4 tbs unflavored unflavored whey protein isolate
1 cup chopped fresh fenugreek leaves
1/2 inch ginger grated
a couple of cilantro strands chopped finely
1/4th of a red onion chopped finely
1 tsp red chili powder
2 green chilies chopped finely
1/4 tsp salt
2 tbs olive oil, coconut oil, avocado oil, ghee
1/2 tsp carom seeds
a pinch of cumin

Directions:

1. Add the coconut flour, almond flour, flaxmeal, psyllium husk, whey protein isloate and add the chopped fenugreek/methi

2. Add ginger, onion, cilantro, salt, green chilies, cumin, carom seeds and mix them well, . Add red chili powder if you need it a bit spicy else you can avoid this step

3. Add about 2-4 tbs of water as required and knead this mix into a dough, it will start falling apart but don’t worry just knead together and leave it covered or uncovered for an hour.

4. Roll into a medium size ball and using the tortilla maker or with the help of rolling pin flatten into a wrap. I add a parchment paper to the tortilla maker/puri press

5. Using a pan, fry these wraps/paranthe with oil of your choice or ghee(i used ghee)

6. Serve it with a choice of your veggie/yogurt and yummmmm!!!!
